San Diego, CA - Part 3 - BBQ

The California State BBQ championships were being held at Imperial Beach. There were teams from all over the US & even from Germany, Switzerland, Ukraine and Estonia. We had the opportunity to talk with one of the judges. The event was sanctioned by the Kansas City BBQ Society. There are three categories: Pulled Pork, Chicken, and Pork Ribs. The only fuel allowed was charcoal or wood. The best cooked meat is cooked for over 14 hours and never exceeds 200 degrees. The contestants worked all night long keeping the temperature just right.

Most of the contestants use special designed grills and smokers. As we walked around we saw many different and large designs and were trailer mounted. Everybody was willing to talk, but few were willing to give us samples.


This German Chef was very proud of his chicken and gave us a leg to sample. It was very good. We later went back when he was preparing the sample plate of pulled pork for the judges. It really looked and smelled great.

This trailer even had the kitchen sink!

This suburban pulled a trailer and also had a slide out stove. There is also a refrigerator and microwave oven.

Here is the start of a side of beef for tomorrows competition.
It will cook overnight.
